This Mango Sticky Rice recipe brings back memories of our Vegan Voyage Thailand!
Even though sweet rice for dessert might sound strange for some, the combination of these ingredients comes out just AMAZING. Being vegan, low-histamine and low sugar, it will surely leave you wanting more. And it’s explosion of flavors will definitely make you wish you knew about it sooner!
Why do I use Monk Fruit?
Even though Monk Fruit wouldn’t be your first choice when shopping in the fruits and vegetables aisle, it is getting more and more attention given its numerous health benefits.
Monk fruit is a calorie free sweetener that comes from a plant! It isn’t a chemical nor does it come with the negative effects of aspartame. - 2 cups organic rice I use brown rice, but grab your favorite.
- 6 cups Water
- 1/2 cup Monkfruit
- 1 can Organic Coconut Cream Get coconut cream/milk that doesn't have preservatives and additives
- 1 can Organic Coconut Milk Get coconut cream/milk that doesn't have preservatives and additives
- 1 pinch salt
- 2 large organic mangos fresh You can substitute frozen mango just heat it before mixing
- 1 cup organic frozen mango You can substitute fresh mango!
Ingredients

- Add the water and rice together and cook for 20 minutes. Simmer until the water is absorbed. While the rice is cooking mix the monkfruit, salt, and coconut milk into a large mixing bowl. Heat your frozen mango and then blend till a puree. Mix the mango into the coconut milk mixture. When the rice is done cooking mix the rice into the mango coconut mixture. Slice your fresh mango nicely and plat it with your sticky rice. Enjoy!
