Saying I love soup would be an understatement! I love making it and eating it whenever I feel like a warm dish. However, this Coconut Soup Low Histamine Vegan recipe takes it to a whole new level. It hits all the points of a warm, rich, healthy, low histamine and vegan soup!

Since I’ve been making sure to eat healthy everyday, I try to include nutrients and vitamins in my daily meals as much as I can. This dish comes as a result of the perfect combination of what your body needs in terms of health benefits, and what your soul needs in terms of warmth!

Every ingredient in this Coconut Soup Low Histamine Vegan soup base is nutritious, as follows:
  • Cauliflower (low in calories, high in vitamins and fiber, and a great antioxidants source)
  • Garlic (highly nutritious)
  • Yellow Onions (high in minerals and vitamins such as vitamin C, and loaded with antioxidants)
  • Extra Virgin Olive Oil (a great and rich source of antioxidants and monounsaturated fats)
  • Full Fat Organic Coconut Milk (an amazing immune system booster)

For extra flavors, you can also add some broccoli (a good source of fiber and protein) and/or carrots (a good source of beta-carotene, fiber, vitamin K, potassium and antioxidants)!
You can serve it atop of quinoa (high in protein and very nutritious) with chopped green onion sprinkled on top.

Low Histamine Vegan Keto Coconut Soup
Instructions
  1. Sautee the onion, garlic, and olive oil until fragrant and starting to lightly brown (not burn). Blend in a blender or food processor with the cauliflower. Add the cauliflower mixture back to a pot. Add the two cans of coconut milk. Drop in the broccoli and carrots and simmer until the broccoli slightly softens. Add salt and pepper to taste. Serve atop of quinoa with chopped green onion sprinkled on top.
