Sticky Sesame Roasted Cauliflower

This Sticky Sesame Roasted Cauliflower is fun, flavorful, and full of healthy nutrients. I am a huge fan of cauliflower and I am so excited to design a whole blog post soon about all of the benefits of cauliflower. Additionally, you can stay away from adding table sugar in this recipe, even though you’re making a sweet and tangy dish. You know I love to design work arounds to make the sweetness in our food very healthy.

Click to see more about why I use Liquid Aminos as a healthier option.

I use canned pineapple chunks in 100% pineapple juice with no added sugar, like this one.

I use this arrowroot powder from Feel Good. Arrowroot is a healthier alternative to cornstarch. I enjoy using this as an organic, natural thickener in recipes. Dr. Axe and many others have reviewed the awesome health benefits of this often unappreciated powder.

Instructions
  1. Preheat your oven to 450 F. Grease the baking pan lightly. Place bite-sized cauliflower chunks onto the pan. Bake 10 minutes, flip (ideally flip each piece, but if you're low on time, shake the pan or stir them around and pop them back in) and bake another 10 minutes. Right before serving you can broil for 1 - 2 minutes to get extra crispy.
  2. Meanwhile whisk together the liquid aminos, pineapple, vinegar, garlic, ginger, and sesame oil in a saucepan. Bring to a boil. While waiting, stir the arrowroot powder and water together until mixed. Add the arrowroot water to the saucepan. Put the saucepan on medium heat and stir frequently as the sauce boils and thickens. Cook until thick, add the sesame seeds, then reduce to lowest heat to sit until ready to serve.
  3. In a large bowl pour the sauce over the florets, sprinkle with scallions and serve. Optional to serve on a bed of organic brown rice, organic sprouts, and micro-greens.
