My mexi-cali side salad is super easy to put together. It works well with Beyond Burritos with Extra Veggies as a fresh side or you could even eat it as a dip if your’e not feeling salsa. Either way it’s fresh and bright and a great way to add more color to your plate.
My recipe is a guide for you but as I’ve said before, just go crazy. Cut the veggies however you want or just take a load off and let the food processor do the work. If you don’t have the exact ingredients, get creative.
The veggies in this salad are ones you probably already have in your fridge and pantry, which I think is very important. I’m more of a spur-of-the-moment kind of cook, so I love to use whatever I have access to at the moment. Canned black beans, frozen corn, those carrots that you bought to eat with hummus but you ended up eating chips anyway, you can use all of those for this fresh salad. And don’t worry once you put everything together it’ll be so fun, bright, and fresh that you’ll feel like you should be sitting outside with a margarita.
Simple ingredients, easy to make, fresh and delicious results.

- 1 Can Organic Black Beans drained and rinsed
- 1 Bag Organic Frozen Corn thawed
- 1 medium Organic Red Onion chopped into bite sized pieces
- 1 bunch Organic Cilantro chopped into bite sized pieces
- 1 medium organic avocado chopped into bite sized pieces
- 1 lime squeezed
- 1 large organic carrot chopped
Ingredients

- Mix all ingredients together and let sit for 10 minutes to meld flavors. Serve by itself or as a fresh side to my Beyond Burritos.
