Creamy Cauliflower Soup with Basil and Ginger

My Creamy Cauliflower Soup is fresh without necessitating an extra trip to the store, nutrient-dense while being tasty, and great for many different diets! You don’t need to worry one bit that this cauliflower soup won’t satisfy; the impressive flavor will have you craving it on any chilly day. Coconut milk and coconut cream make this soup super creamy and delicious. Loads of ginger bring a fresh zest to what some say may be a boring veggie.
I’m on a low histamine diet because of my Chronic Idiopathic Urticaria so I know that everyone has different food needs. I want my recipes to accommodate these needs. I created a recipe that works for me, but I also made it keto-friendly, and of course vegan. There’s a surge in people interested in a keto diet, but traditional keto diets are hard on the body and awful for our planet. An eco-keto diet is awesome and that’s what this soup fits in to!
Cauliflower is misunderstood. I know it gets mushy and pale when you cook it and it looks like it doesn’t have much to offer, but it’s a powerhouse of nutrients. I happen to love it in anything and I especially love it in this recipe. Cauliflower combined with the brightness of ginger and creaminess of coconut milk is absolutely divine.
I prepared this Creamy Cauliflower soup with Fancy Roasted Artichoke and Asparagus.

- 2 16 oz bags organic cauliflower frozen
- 1/4 Cup Water
- 20 cloves Organic Garlic peeled
- 2 sweet or yellow Organic Onions peeled and chopped
- 1 cup organic fresh ginger peeled and chopped
- 2 16 oz cans Organic Coconut Milk
- 1 16 oz can Organic Coconut Cream
- 3 tbs Organic Extra Virgin Olive Oil
- 1.25 cups fresh basil 1/4 cup saved for garnish
Ingredients

- In a large pot, simmer cauliflower and water.
- Slice sweet onions, put in large skillet with olive oil. Sauté on medium heat.
- Peel garlic. Once onion has started to soften and be fragrant, add garlic. Peel ginger, put in food processor or chop finely. Once garlic is fragrant, add ginger to pan. Turn heat to low and allow to cook gently while preparing other ingredients.
- Once cauliflower has softened put it in blender with one can of coconut milk and blend until totally smooth. Return to large pot.
- Add remaining can of coconut milk and a can of coconut cream to the blender. Next, add the onion-garlic-ginger mix. Blend until smooth. Add one dense handful of basil leaves. Blend until smooth. Return to pot and mix well.
- Add salt and garlic powder to taste. Serve in a bowl with fresh basil as garnish!
