This dressing can be used as a Buddha Bowl dressing, as a salad dressing, as a fresh veggie dressing as a snack and so much more.
I like to mix this up in a jar and keep it on hand to use whenever I want a splash of flavor on my vegan meals.
The seasonings make this dressing fun, the fruit juices keep it bright, the mustard gives it just a hint of a kick, and using the nut butters instead of oils helps fill the dressing with awesome nutrients instead of empty calories that leave you feeling heavy and wanting more.
Nut butters
There are many nut butters out there. I like an almond butter or a peanut butter that’s organic with no sugar. The only ingredient should be the nut that makes the butter and, if you like, some salt. No additional oil or anything else.
Here is a simple organic peanut butter with no additional nonsense 😉
Orange juice
Orange juice follows the same pattern of the nut butter and most of my advice: no added sugar, organic – always. Also, with juices you want to watch for “not from concentrate”.
Concentrate means they take out the liquid from the juice, then add water when they’re ready to make it for you to buy. This takes away nutrients. Skip that whenever possible.
Sometimes it’s hard to find organic, no sugar added and not from concentrate if you’re not at a health food store. In that case, I would recommend being lenient with “from concentrate” but sticking to your guns with organic and no sugar added.

- 4 tbs organic almond butter or substitute organic peanut butter
- 1 tsp organic dijon mustard
- 1/2 cup organic orange juice
- 3 cloves organic pressed garlic
- 1 tsp organic lemon juice
- 2 tbs fresh mint leaf
- salt and pepper to taste
