Beyond Burritos with Extra Veggies
This hardy, vegetable-filled, healthy, and delicious Beyond Beef Burrito will have you reaching for seconds and thirds!

  1. Sauté onion in olive oil until translucent. Add garlic until fragrant. Break apart Beyond Beef like you would ground beef and mix into garlic and onion. After 5 – 8 minutes of cooking add 1 cup of water and the packet of taco seasoning. Stir to incorporate. Let simmer for 5 minutes. Add carrot. Let simmer for 5 – 10 min. Turn off heat, add zucchini, stir and let sit, covered.
  2. While beef mixture is cooking, heat refried beans on stove or microwave. To prepare the tortillas, Add a layer of cheese to each and heat over stove or microwave.
  3. Layer the beef and vegetable mixture on top of cheese. Add refried beans, sour cream, guacamole, salsa. Wrap it up and enjoy!

  • You can cut the veggies whatever kind of way you want. You’ll see in my Lunchbreak Live episode that I spiralize my zucchini which makes for a fun twist. 
  • Everyone prefers different ratios of fillings. Please feel free to experiment to find your perfect bite.
