Vegan Keto Stuffed Avocado
This vegan keto stuffed avocado dish is full of fat and nutrients. It is delicious and has a flare of art when it is plated.

Instructions
  1. Put the oil, onion and garlic into a pan and sauté. Once fragrant and opaque add crumbled tofu, cumin, garlic powder, salt, chili powder and liquid aminos. Stir well and bring to a light simmer. Add cauliflower and let cook for 5 minutes. Add broccoli rabe and tomatoes. Cook until all vegetables are easily pierceable with a fork. While the main mixture is cooking mix all mayo ingredients together well. Set aside. Wash the avocados and cut them in half. Use a spoon to scoop out a bowl in the center of the avocado. Put the scooped out avocado into a side salad. Scoop the filling into the center of the avocado. Top with cheese, cilantro, and the mayo sauce.
