Sweet and Savory Cold Buddha Bowl

“Buddha Bowl” is a term I learned a long time ago when venturing into the vegan world. I have taken it to mean “a bowl of kinda whatever, almost always with a based of quinoa”. This bowl follows that example well.

Quinoa

Did you know that quinoa is the only grain that is a complete protein? That’s right! So cool. That is why quinoa is a staple of my life and Buddha Bowl. I usually get mine from Trader Joes, but for those of you who aren’t living near one, Amazon to the rescue! Here is an organic whole grain quinoa.

Other proteins

Pumpkin seeds have a remarkable amount of protein in them! Pop these on your salads and bowls for fun flavor, crunchy texture, and added protein.

Garbanzo beans are another vegan source of protein. They also have great fiber and add creaminess to your meal.

Organic almond butter is a great base for salad dressings as well as being a good source of protein and a yummy variation for anything you put peanut butter in! This one on Amazon is pricey – you can usually pick it up at Trader Joes and Whole Foods.

Other fix’ins

Organic sun dried tomatoes I have not found in store regularly so online has been a best bet for me.

Sweet and Savory Cold Buddha Bowl
This is delicious, nutritious, and a great dish to make in a large batch so you can eat it all week. Consider doubling or tripling the recipe so that you have it for lunches or dinners later on.

Instructions
  1. Place all quinoa group ingredients into a pot and cook according to quinoa packaging.
  2. While quinoa is cooking chop all mix-in ingredients. If you're cooking in large quantities to save for later keep the mix ins separate from the dressing and the quinoa until you're ready to serve. Mix all dressing ingredients in a dish and adjusts seasoning to taste.
